We caught up with Christine Paxton, Catering and Banquet Brand Sales Manager at Copeland’s of New Orleans Houma, to learn more about their catering and event services, what she loves about celebrations and the advice she has for couples planning their wedding.

From New Orleans Hotels to Bayou Region Events

Christine’s career in hospitality began in hotels in New Orleans before eventually bringing her to Houma. Moving into catering and banquets was a natural transition, and today she works with celebrations and events throughout Houma, Thibodaux, Raceland and the surrounding area.

“I’m the one-stop shop when it comes to great local food for celebrations, business lunches, weddings, showers, retirements, anniversaries and more,” Christine says.

But for her, the work goes beyond putting together a menu.

Every event brings a different group of people, traditions and favorite foods to the table. Christine says getting to know the planners and guests gives her team an opportunity to connect with them while helping create something personal to the occasion.

That’s the thing Christine wishes more couples knew.

And catering doesn’t necessarily have to look the same for every couple.

Christine has worked with events that included staffed service as well as celebrations where family members took over after the food was delivered, allowing the couple to reduce labor costs.

That flexibility can give couples another option when they’re deciding where they want to spend their wedding budget and where they’re comfortable doing things a little differently.

Copeland’s Houma also has an on-site banquet space for smaller events of approximately 60 to 70 guests.

That makes the restaurant an option not only for smaller weddings, but also for showers, rehearsal dinners, engagement celebrations, anniversary parties and other events surrounding the wedding itself.

Christine’s Advice for Couples

When it comes to wedding planning, Christine’s biggest recommendation is a simple one: give yourself time.

“Planning ahead will help you achieve your dream, give you time to enjoy every minute of your engagement and wedding, and help you manage your budget too,” she says.

And perhaps that’s part of what she enjoys most about the business. Whether she’s planning a menu for a wedding, corporate celebration, birthday or retirement, each event starts with learning what matters to the people celebrating.
